Honey Cake

I’m sure you’ve been to Elana’s Pantry. If you haven’t, it’s a place you must drop by when you have time to browse. She not only has an incredible variety of quality, qluten-free recipes, she is always up to something innovative which, quite honestly, keeps me plugged-in and thinking about my own cooking.
After browsing through her site, I decided to go with the Honey Cake for a few of reasons. One, I had most of the ingredients. Secondly, my husband is Jewish – I’m not – so I thought I should have at least one good holiday recipe in my back pocket. And third, I’d just purchased five pounds of almond flour and thought I should put it to good use.
When executing the recipe, I used an electric mixer. The batter came together beautifully. My house smelled of rich coffee, cinnamon, and cloves while the Honey Cake was baking. Once a toothpick tested clean, I let it cool for 10 minutes on a wire rack. It came right out of the pan, and, immediately I tried a little. And then a little more. And then just a little more…the flavor was incredible. Moist, tender, and perfectly baked, this cake is one I will make again and serve to my family and friends.
My husband was out of town when I baked this, so I individually wrapped the pieces and put them in a big, freezer-safe Ziploc bag so he could try it when he came home. I heated it up for him a week later and it was just as good as they day I took it out of the oven.
This event is, for me, the best event hosted for gluten-free bloggers. I spend so much time creating and tweaking my own recipes that I sometimes forget how much I can learn from cooking recipes from other bloggers. I’ve learned so much from my Dinner with Barefoot series, and making Elana’s Honey Cake was no exception.
My good friend, Helen, has taught me to always stop and think specifically about the lessons I take away from anything I do. It’s become a habit for me, and a very beneficial practice at that. From making Elana’s Honey Cake I learned:
- Coffee, cinnamon, and cloves compliment each other beautifully
- Gluten-free cakes don’t need to be complicated
- Simple is very good

What a great post, Amy! I love the way your friend taught you to take away something from every experience.
I am a big fan of Elana’s also and the honey cake is on my “must make” list for sure (anything with honey is on my list since we keep bees and they give us fabulous honey). Your cake turned out wonderfully!

I heartily agree. I love the Adopt a Gluten Free Blogger “event.” It’s nice sometimes to just sit back and enjoy and appreciate a peers hard work putting together a recipe that really shines.
This looks wonderful, I won’t venture to make it in my kitchen for a while though as my mother and son have severe nut allergies. I may have to try and substitute the flour. I really wish I could try almond flour, maybe some day….

Just wanted to pop back in and say thanks so much for your very sweet words, Amy! Since we just harvested 4 gallons of honey from our one bee hive near our house (others are “shared” and on MIL’s farm), I’m more inspired than ever to try some new honey recipes. I actually made a variation on Elana’s Flourless Chocolate Banana Cake Wednesday. It was really very good. I love that when you eat sweets made with honey, you don’t want one piece after another–one piece satisfies.
Thanks for all you do, Amy! Your history is inspiring. I love in your header that you have “Freedom” as part of your subtitle. So many meanings for that one for all of us who have eliminated foods we are intolerant to.
