Slightly Indulgent Monday – The Kickoff Event!

Welcome to Slightly Indulgent Mondays – a blog carnival dedicated to fabulous food made a little bit healthier.
Since this is the first Slightly Indulgent Monday, I’m posting the short description of the guidelines below. If you want more information, you can find in my navigation bar on the Slightly Indulgent tab.
The short description:
- Everyone is welcome to participate. You don’t have to post a sugar-free or gluten-free recipe. Together, we can inspire each other and learn about creating fabulous food, a little healthier.
- You decide what “a little bit healthier” means to you. This is really a personal decision and means different things to everyone. “A little bit healthier” changes for me as I grow and develop as a cook.
- Each week there will be a give-away. To win, you have to link up, post a comment telling how your recipe is slightly indulgent, and include a link back to my blog.
- If you don’t have a blog you can still participate. Simply post your recipe in the comment section below & you’ll have a chance to win too.
- You might get to be in the spotlight! I will choose my favorite Slightly Indulgent recipe and post it the following week.
This week’s give-away is a microplane, one of my can’t-live-without-it kitchen tools. I have two, and I use them nearly every time I cook. If you’ve never used a microplane, it’s perfect for grating garlic instead of using a press, for zesting citrus, grating hard cheeses, ginger, and veggies.
I’ll announce the microplane winner in Wednesday’s post.
If your recipe is chosen to be in the spotlight next week, I will contact you to get a little info so I can tell my readers all about your fabulous dish.
My contribution this week is one of my favorites – Angel Food Cake. It’s Slightly Indulgent because it’s full of egg whites and flavor, but light on the agave and gluten-free flour.

I’m excited about this =D. My entry is my recipe for Memory Buns, which are Slightly Indulgent because they’re gluten free and full of healthy (tasty) grains!

No refined starches, great whole grain flavor. Thick and rich 100% sorghum syrup. That is slightly indulgent!

I am so excited about this carnival! I can’t wait to think of more ideas and see what everyone else has to show! My entry is Summer Mango Sorbet because it is refined sugar-free (made with agave or stevia), full of fruit, and low-fat, and dairy-free. That being said, it is still so delicious that you won’t notice those things at all!

I’m entering the Tuna Melt Muffins I made for my little boy and I (and his daddy — the only one in the house NOT gluten-free — ended up eating half of them!). They’re Slightly Indulgent because they’re GF and use some healthier ingredients like light mayo & Egg Beaters.

My flourless chocolate torte (You can’t BEET it) is slightly indulgent because it is sweetened with beets and agave, and contains no grains. I fed it to a crowd that has no dietary restrictions and it passed the test! This is a nod to Elena’s Pantry, one of the slightly indulgent queens!

I posted a link to my Chicken Enchiladas Verde. My mother in law has celiac’s and can’t eat anything with gluten. She asks me to make this every time she visits. I either use corn tortillas or I bake it in a casserole dish without tortillas and she eats it with corn chips. It is slightly indulgent because of the 2 cups of cheese – but it actually tastes more indulgent than it really is.

My cinnamon rolls are indulgent with a fair amount of sugar, but they are made a little bit healthier by adding more sorghum. The original recipe was great, but all starch.
