Lauren from Celiac Teen
If you haven’t been by Lauren’s blog, put it at the top of your to-do list. Lauren is an incredible young woman with a huge passion for life. In reading her blog, I’ve learned that she’s has more challenges at a young age than most people have their entire life. Yet, she has found a way to joyfully live a full life and to inspire others. Lauren’s blog is especially an inspiration for those teens that are struggling with dietary restrictions or Celiac disease.
A talented baker and cook, Lauren regularly (and successfully!) participates in The Daring Kitchen’s monthly challenges. Each post Lauren shares is insightful and includes tips to help her readers execute the recipes at home. It’s also quite obvious that family is an important part of Lauren’s life, as she shares how they cook together and has even featured her brother’s recipes. In fact, her mom and her aunt are tow of the biggest influences in her cooking. One of her favorite gluten-free cookbook authors is Roben Ryberg’s You Won’t Believe Its Gluten Free and also finds lots of inspiration through other cooking blogs.
Her submission last week was a family-inspired recipe, Memory Buns. Packed with healthy grains and lots of love, Lauren dares you to eat just one.

My Submission this Week
Light Chocolate Ice Cream – with just enough chocolate so that you can add any complimentary flavors without the chocolate overpowering them. Sugar-free and oh-so-Slightly Indulgent.
I fully intended to post a new recipe this week, but given the holiday it’s crazier than normal around here. So, here’s a favorite Slightly Indulgent recipe of mine that I posted long before anyone knew I had a blog.

This week’s recipe is indulgent because it’s cake, but it has nuts, pineapple, and coconut. Add some whole grain flour and it’s definitely a little bit healthier.

Love to see Lauren in the spotlight here, Amy! She is a delight and amazing in so many ways. I’m always surprised and happy to see how she responds to the baking challenges and what she’s cooking in general. Her memory buns are such a neat treat! Now I need to go check out her Surprise Corn Muffins.
Love your light chocolate ice cream~ It seems just right to me. And, I didn’t even know there were reusable silicon baking cups! Now I need to go check out these other entries, too. What a nice way to unwind after a weekend away–thanks so much for hosting, Amy!

Do all recipes have to be sugar-free? We are gluten free but not sugar free. I am off to look at some recipes.
