Slightly Indulgent Mondays is dedicated to fabulous food made a little bit healthier.  Your recipe doesn’t have to be gluten-free or sugar-free to participate, just healthier in some way.  It doesn’t have to be a new post, either.  For more info, read this.

Everyone can win this week – just leave a comment about a submission or how you make food healthier!

I thought I’d change things up this week and give bloggers and non-bloggers a chance to participate.  Leave a comment about one of the submissions or tell us one of your best tips for making food fabulous and a little healthier and you’ll be eligible to win this week’s give-away. As always, next week one of the submissions from this week will be featured.

My Submission

This week my Slightly Indulgent recipe is my newly created, tastes like fall Carrot Date Spice Muffin.  I posted it here to make this post a little shorter.  I love these tasty, moist, muffins – and they’re a little healthier because they’re lower fat, have carrots, dates, a higher protein flour blend, and teff.  (Teff is a protein and calcium packed grain.)

Featured Blogger: Cheryl at Gluten-Free Goodness and her Chocolate Torte!

cheryls choc torte I was completely impressed that she was able to make a flourless torte without sugar.  I even woke up the next day thinking about it.  Don’t be surprised if you see my own variation showing up in the near future.

A little about Cheryl – Though she has many food intolerances, she doesn’t let that affect her passion for cooking or life.  She is an incredible cook and nutritionist that ‘walks the walk’ so she can be of maximum service to her clients, using homegrown and organic products in her kitchen.  Some of her favorite foods are red peppers, caramelized onions, peaches, and frostings – chocolate to be exact.

Cheryl’s favorite cookbooks include Carol Fenster’s Cooking Free, Ricki Heller’s Sweet Freedom, and Susan O’Brien’s Gluten-Free, Sugar-Free Cooking.  She loves to read cookbooks – her husband even has a secret stash of them in case she’s in a bad mood.  Her favorite blogs – Karina’s Kitchen, Diet Desset, and Dogs, and Book of Yum.

Though not formally diagnosed with Celiac disease, Cheryl eats gluten-free due to fibromyalgia, chronic fatigue and Lyme’s, all inflammatory conditions that tend to benefit from a gluten free diet.  She also gets violently ill and has joint pain from gluten, which is good motivation to stay away from it.

She also eats sugar-free after discovering that she feels so much better without it.  Her current diet has evolved over the years as she’s learned more about food and listened to her body.  Make sure to stop by her blog for more of her inspired recipies. This week, I’m giving away another favorite kitchen gadget of mine – a set of 3 KitchenAid funnels.  They have a silicone bottom that will let them easily fit into many different size jars and also come with a strainer for those of you who like to make chicken stock.  My wide mouth funnel is always in use to put things into jars and container.  I could use another set myself!

    This week was crazy, so I’m linking to an older recipe for blueberry almond cake, which is slightly indulgent because its gluten free, uses ground almonds and has cornmeal and berries in it =D. I loved learning more about Cheryl, and that chocolate cake looks perfect!

    I’m linking to my recipe for gluten-free, dairy-free, sugar-free coconut waffles. The coconut milk makes them an indulgence, but otherwise they’re pretty healthy!

    With a typo and all, I am submitting Little Bay Baking Co’s Donut Holes. The mix is sugar free, in addition to being gluten, wheat, soy, casein, and dairy free. I made them with honey – they were soooo good!

    My cake uses whole grain sorghum and has a little glaze on top rather than a bunch of icing.

    Thanks for hosting this fun carnival. I like the funnels. I don’t use mine much, but mine aren’t as nice as that. I particularly like the strainer. Maybe I’ll put them on my Christmas list for one of the kids to get me.

    I’m so busy these days, preparing for the arrival of baby #6, I don’t have a chance to share a recipe today.

    Here are the general ways in which I make things healthier around here:

    I include almond flour in my gluten-free flour mix to add protein, texture, and a whole-grain look to my baked goods. I also use honey, concentrated fruit juice or molasses whenever I am unable to use stevia.

    I’ve been so delighted to recently discover your site. I’m still exploring and have found some wonderful treasures. THANK YOU for sharing your journey and recipes.

    So pleased to have stumbled upon your blog. Lovely and lucious indeed. Right now my home smells so fall and delicious-like. Why? I have made a meatloaf for my DH who is GF for celiac. I am for health. My little hint for your readers…I used Corn Chex instead of bread crumbs. They meld right into the meatloaf. DH was so excited when Chex came out GF. I don’t eat them as cereal but he does. I try not to eat most flour products.

    My new honeydew sherbet is gluten free, dairy/casein free, and refined sugar free, but it’s still comfort and recovery food–how cool is that? (Pun intended. LOL) Thanks for giving me a reason to make it and pamper myself, Amy. ;-)

    These tasty bars are a bit healthier because they have spunky dried cranberries, and I cut them really small. These were really yummy, and they’ll be perfect for gluten free holiday gifting.

    I am so glad I found you. I am going to check my recipes. My blog is gluten free but I am not sure how healthy it is. I have been trying to make it more so. I am going to look up some of my recipes and I will share if I find some that fit these criteria.

    I’m glad you found me, too!! Please know that “a little bit healthier” can really mean anything from adding veggies or fruit, using less sugar, or maybe you want to get more protein in your diet so you add some eggs, it can mean eating more wheat flour instead of white if you need that in your diet (I obviously don’t!!) – this is really all about what healthier means to you. The truth, as I see it, is that healthier depends on your body and your dietary needs. You have to decide what works for you and your life.

    I love learning from everyone and seeing how they make their food taste incredible with a healthier spin. It inspires me to become a better cook and broadens my view of food. I hope you’ll join us next week!!
